Day 25

Day 25 – My day, in great detail

I have a pretty run-of-the-mill schedule! I’m not going to run through my weekday because it’s quite boring. It would be like, wake up, go to work, meeting, computer work, lunch, meeting, computer work, home, dinner, TV/computer, sleep.

Seriously.

So let’s go through a “typical” Saturday!

6:00AM – Wake up to use the restroom for the second or third time in the night. Make Kris move over when I get back in bed because he’s taken up my side in the time it takes for me to use the restroom.

7:50AM – Wake up again because Nimbus is letting us know that he’s ready to start his day by whining from his kennel. Kris lets him outside for the morning.

8:30AM – Roll out of bed and head straight for the coffee maker. It’s 8 cups of freshly ground Dunkin’ Donuts coffee for this family! While the coffee brews, I go around the house opening the curtains and pulling up the shades. Kris comes into the kitchen and gets the soy milk for him and the half and half for me. I make our breakfast. Kris gets one piece of toast with peanut butter and honey. I get two pieces of toast with cherry jam and Smart Balance. We head into the den with our breakfast and spend some time on our laptops.

10:30AM – We’re still lounging on the couch, and we’ve done a little scripture devotional together. Today, it was on Romans 14. Talk about conviction!! Livingston has woken up in my belly and we spend some time talking to her. The phone rings, and it’s my mom. She and my Dad are heading to breakfast in town and will be stopping by our house to drop off our new swivel rocking chair that they had recovered for Livingston’s nursery. That means that we need to get motivated!

11:00AM – We get dressed and Kris heads to The Red Brick House to pick up Livingston’s dresser, which will double as a changing area. I straighten up the house and make our bed so my parents don’t think we live in a pig sty! This past week has been crazy for us, so we haven’t had much time to keep the house super tidy.

12:00PM – We’re still waiting on my parents and we’ve gotten hungry. I pull out our leftovers from dinner last night – The Pioneer Woman’s Bean and Beef Burritos – to reheat for lunch. Kris has his with water, and I have mine with a glass bottle Coca Cola!

12:30PM – Mom and Dad arrive with the chair. The men load it into the house while I show my mom the new Lands End Canvas collection online. We both decide that we need a pair of their bootcut jeans in the dark denim wash. While my parents are here, we decide that we should hang the mirror that Mom discovered at the Thieves Market (a local antique warehouse) over Livingston’s dresser. It looks great!!

1:30PM – Kris heads outside to cut the grass. It is blazing hot, so I sweep the cobwebs off of the porch then retire inside to spend some time reading blogs, Facebook, and Twitter.

2:30PM – Kris has wrapped up a wedding video for a local couple, so he leaves the house to have the DVD duplicated and I decide to shower and start preparing for our dinner plans.

3:30PM – I hit up the Piggly Wiggly for Quick Grits, Jimmy Dean sausage, and a gallon of Simply Orange orange juice. We’ve got dinner plans with our friends Laurie Beth and Hugh – and we’re collaborating to make breakfast for dinner! Once I get home, I boil water for the grits, brown the sausage, and mix it into the crock pot to let the grits slow cook. Then, I decide that we need some new belly shots of Livingston, so Kris and I head down to the park for some photos!

5:00PM – It is BLAZING hot outside and I am being attacked by mosquitoes. We feel like we’ve gotten some good pictures, so we come back inside to edit. I pull out the Cortizone lotion for my poor bitten ankles, and Kris starts to edit our photos.

6:00PM – We arrive at our friends’ house for dinner. They have a baby boy, so it’s great practice for us to hold him and learn how to be a Mommy & a Daddy!

9:00PM – We eat dinner. Blueberry pancakes, slow cooked sausage and grits, and scrambled eggs. And Paula Dean’s chocolate chip pie (kind of like a Derby pie) for dessert. YUM! I’m stuffed!

10:00PM – We watch YouTube videos for an hour and laugh our heads off. Then, we all realize how tired we are and that we have to get up early for church in the morning!

11:00PM – Arrive at home. Put on PJs. Pick up our laptops. I decide to upload a photo album of belly pictures to Facebook, and then I start to crash.

12:00AM – I can’t believe I’m still up! Drink my nightly glass of water, and we’re off to sleep. Goodnight!

24 Weeks!

24 Weeks

Total weight gain: Last time we went to the doctor, it was 10 pounds total. But my tummy has POPPED over the past 2 weeks, so I think it’s probably more like 14 or 15 now!

How big is baby? Livingston is the size of an ear of corn; almost a foot long!

Milestones: Her lungs have started developing “branches” of her respiratory “tree” (as Baby Center says), and her brain is growing quickly. She is also developing taste buds like crazy.

Maternity clothes: My maternity shorts are too small now… RIP. Too bad it’s still hot. I think our next step is to buy a pair of nice maternity jeans, but I’m glad to report that I was able to wear – and button – a pair of my pre-pregnancy jeans tonight! (They do have a little bit of stretch to them.)

Sleep: Besides the fact that I get up 2 to 3 times a night to use the bathroom, I’m sleeping fine. The dreams are still vivid, and I never really get enough sleep, but that’s okay. I’m still sleeping.  And I love my full body pillow, even though I kick it out of the bed by the morning because it gets too hot.

Movement: Livingston has settled into a pretty predictable wake/sleep pattern. I always expect to feel her around 10:00PM… that’s her most active time of day! She is kicking so hard now that you can see her little thumps by just looking at my tummy. Kris thinks it’s funny! She also responds to hearing his voice, which I love.

Food cravings: Ice cream. And I think my co-workers were a little taken aback today when I almost had a complete hissy fit because there was no chocolate in my office. Who am I? And I’m not really nesting in terms of cleaning… I’m cooking.  A LOT.  Like, I’ve become OCD with cookbooks and baking things from scratch and planning our meals.  It’s a great way for me to de-stress, but also, I think there’s this nesting thing happening with it.

Belly button in or out? Well, I’m seeing more of it than ever before, but it’s still in. I don’t think it will pop out. I have a pretty deep belly button!

What I miss: A flat stomach. I know that sounds crazy, but my tummy is tight like a tick and it’s becoming uncomfortable and I have forgotten what it feels like to have a flat stomach.

Best moment this week: Relaxing with Kris on Saturday. It was a great weekend, and I’m looking forward to another one in just a few short days!

Day 24

Day 24 – Where I live.

We live in Florence, SC, lovingly referred to as “Flo-town.” It’s halfway between the capital of South Carolina (Columbia) and Myrtle Beach. We’re two hours from Charleston and two hours from Charlotte.

I grew up in this town. Of course, I never thought I’d end back up here but… here we are!

Florence is growing. We now have a better selection of restaurants, but our shopping is still quite lacking (and when I say “lacking,” I only mean that I’d love to have an Anthropologie and J. Crew!)

I like Florence because, even though I know a ton of people, I still meet new people all of the time. Our population is between 90,000-100,000 people.

Our summers are HOT (think over 100 degrees with humidity that you can’t even imagine) and our winters are mild (in the 40s and 50s). We rarely get snow!

We have an airport right outside of our downtown area. And speaking of, our downtown area is in the beginning phases of an overhaul. But that’s politics. And you don’t want to get me started on the slow progress there. I would love to see more shopping and dining options in the downtown vicinity, but that hasn’t happened yet. I hope it will pick up soon.

Famous people from Florence? Do you know Mark Walberg? (Not Marky Mark. This is the host of Antiques Roadshow.) And that’s about it.

Day 21

Day 21 – A recipe

Well dang! This is what I did yesterday! But I have plenty to share, so no prob.

And I’m not really going to share… I’m going to redirect you to one of my favorite reads, The Pioneer Woman. If you’re not reading her blog, why not?

Yeah, she lives on a ranch. And I pretty much envy that she gets to wear jeans and boots every day.

So not only does she blog, but The Pioneer Woman COOKS. When I say cook, I mean like seriously, she has her own cookbook.

Here is Ree’s recipe for Kris’s favorite pasta.

Day 20

Day 20 – A hobby of yours

My favorite thing to – besides geek out on the interwebs – is to cook. I zone out and enjoy the simple act of creating delicious food. But, I’m not a baker. I have butchered some cookies in my day. Below is one of my favorite recipes of all time! And it would be great for you to make it now that the weather is still quite warm and the lime/cilantro flavors will seem relevant.

Lime Infused Flank Steak with Black Bean, Corn, and Avocado Salad. (Is your mouth watering yet?)

Ingredients
1 pound(s) raw lean flank steak
1 medium garlic clove(s), peeled and smashed with side of a knife (I used minced garlic out of a jar)
1 tsp fresh lime juice
1/8 tsp table salt
1/8 tsp black pepper, freshly ground

Salad
1 Tbsp jalapeno pepper(s), minced (do not touch seeds with bare hands) (I didn’t have these…so I didn’t use them)
1 small corn on the cob, cooked, kernels removed (I used a drained can of corn)
1/2 medium avocado, peeled, pitted and diced (I used one whole avocado)
1 cup(s) canned black beans, drained and rinsed
4 tsp fresh lime juice
2 Tbsp cilantro, fresh, minced
1/8 tsp table salt
1/8 tsp black pepper

Instructions:
Preheat grill to medium hot. (I used a deep frying pan on the stovetop and put the heat on medium-high)

Score steak on one side by making shallow crisscross slashes with a sharp knife; rub garlic over cut surface of steak. Brush steak with lime juice and season with salt and pepper; set meat aside for 10 minutes to allow meat to absorb flavors.

Meanwhile, combine salad ingredients in a medium bowl; stir gently and set aside.

Grill steak for 5 minutes on first side; flip and grill until well-browned on outside and medium-rare inside, about 5 to 6 minutes more.
(If you’re cooking stovetop, sear the steak on one side for 2-3 minutes, then flip and sear for 2-3 minutes on the other side. Then turn the heat to low and cook for 5-10 minutes more or until the steak is done to your likeness.)

Immediately remove steak from grill and set aside on a clean plate for 5 minutes for meat to reabsorb juices. Thinly slice steak across grain and serve with salad.
